Method
1. Sift the baking powder, flour, coriander powder and cumin powder into a medium bowl, make a well in the centre and add the creamed corn, salt and pepper to taste. Mix and combine well.
2. Heat the oil in a non-stick frying pan. Take heaped spoonfuls of mixture and drop into the pan; slightly press down and flatten with a spatula.
3. Shallow fry few fritters at a time.
4. Brown the fritters on both sides.
5. Remove on absorbent paper towels.
