Egg Pepper Sandwich

Method
  1. Mix the onions, tomatoes, green chilly, sweet and sour sauce, pepper and salt and stir well.
  2. Add the beaten eggs to this mixture.
  3. Brush a frying pan with butter and pour the egg mixture fry till dry.
  4. Keep the fried filling aside.
  5. Spread some sandwich cream on to 2 of the bread slices and fill in with the fried filling.
  6. Put the other slice and close the sandwich.
  7. Toast the sandwiches in a toaster and put them in a serving dish.
  8. Serve the sandwiches with sliced cucumbers and boiled potatoes.
Ingredients:
4 - brown bread slices
2 - eggs, beaten
1 - small tomato (cut into tiny cubes)
1 - onion (cut into tiny cubes)
1 - green chilli (chopped)
1 tsp - sweet and sour sauce
1/2 tsp - pepper
Salt as required
Sandwich cream
Low fat butter unsalted
