Chicken Chilli Fry

Method
  1. Heat the oil in a wok.
  2. Fry the chicken until it is sealed, stirring frequently.
  3. Remove from oil and put in a pan.
  4. Heat the butter in a wok and fry the garlic, ginger and chillies for one minute.
  5. Add the onions and fry till they become brown in colour.
  6. Add half of the curry masala powder and stir well.
  7. Add the chicken pieces and salt and saute for 10 minutes.
  8. Add the fried onions, soup cubes and water to the chicken and mix well. Cook till done and dry.
  9. Add the green chillies, tomato slices and the remaining curry masala powder and saute for three minutes.
  10. Garnish with coriander leaves with a squeeze of lemon juice.
  11. Serve hot.
Ingredients:
45ml/3 tbsp - ghee
700 gm - chicken (cut into 4 cm cubes)
2 tbsp - oil
2 tbsp - butter
6 nos - garlic pods(chopped)
5 cm piece - finger (cut into very thin pieces)
8 nos - fresh red or green chillies (shredded)
2 nos - onions (large)
2 tsp - durry masala powder
Salt as required
2 nos - chicken soup cubes
150 ml - water
5 nos - green chillies (slit lengthwise)
2 nos - tomatoes (cut into thin slices)
15 gm - coriander leaves (chopped)
Juice of 1 lime

For dressing:
2 - garlic cloves minced
3 tsp - ground cumin toasted
3 tsp - ground coriander toasted
4 floz - red wine vinegar
10-12 floz - extra virgin olive oil
