Chicken Phad Thai

Method
  1. Soak noodles for 30 minutes in warm water until pliable and drain (sometimes it takes longer).
  2. Mix sauce (sugar, vinegar, paprika and fish sauce). Set aside.
  3. Heat wok, add meat and stir fry.
  4. Add noodles. Add garlic and sauce.
  5. Tuck eggs under noodles and add oil as needed.
  6. Add sprouts and garnish with green onions, peanuts and lemon wedges.
Ingredients:
1/2 lb - dried rice noodles, 1/8" wide
1/2 lb - shrimps or chicken or pork
3/4 cup - ground roasted peanuts (peanuts finely chopped)
2 - eggs
1/4 cup - fish sauce
warm water
1/4 cup & 2 tbsp - sugar
2 cloves - garlic (finely chopped)
1/4 cup & 2 tbsp - white vinegar
1 tsp - paprika
4 - slivered green onions
1/2 cup - oil
3/4 lb - bean sprouts
2 tbsp - ground roast chili
lemon wedges
