Spring Onion Egg Fry/Poriyal

Method
  1. Wash the spring onions thoroughly in warm water.
  2. Chop it including the roots and shoots.
  3. Heat 1 tbsp oil in a pan; add mustard seeds, when it splutters, add cumin seeds and curry leaves.
  4. Now add the chopped onions.
  5. Fry for a minute and then add the green shoots.
  6. Add salt, chilli powder and saute.
  7. Add eggs and fry for 4-5 minutes until it reaches a bhurji consistency.
  8. Add oil as you fry.
  9. It prevents the egg from sticking to the pan.
  10. Remove from fire and serve.

2 bunches - spring onions/scallions
1 - egg (jumbo size)
3 tbsp - oil
1/4 tsp - mustard seeds
1/2 tsp - cumin seeds
Curry leaves, a few
1 tsp - chilli powder
Salt to taste
