Meringue Bread Pudding

Method
  1. Soak the bread in the milk till it becomes soggy.
  2. Add salt. Beat the egg yolks adding vanilla essence & sugar.
  3. Add the raisins to the bread and mix.
  4. Pour into a greased dish and bake in a moderate oven till done.

For meringue:

  1. Beat egg whites till they stand in peaks.
  2. Add 6 tbsp sugar & 1/2 tsp vanilla essence.
  3. Beat till sugar melts.
  4. Remove the pudding from the oven & cover with meringue.
  5. Return the pudding to the oven & cook till the meringue is set & brown.
Ingredients:
5 cups - diced bread
3 cups - warm milk
1/4 tsp - salt
3 eggs
1/2 cup - sugar
1 tsp - vanilla essence
1/4 cup - raisins
6 tbsp - sugar
