Lime Cheese Cake

Method
  1. Melt butter. Crush the biscuits.
  2. Mix both together and press into a greased pie dish.
  3. Bake at 200 degrees C for 10-12 minutes.
  4. Cool and keep in the freezer.
  5. Soak the gelatin in � cup of water.
  6. Separate the eggs.
  7. Add lime rind and � cup sugar to yolks and beat till thick. Add the milk.
  8. Cook stirring on very low heat till the mixture thickens. (Do not boil).
  9. Dissolve gelatin over a low flame and add to the custard. Cool completely.
  10. Mix cream cheese with lime juice and add to the custard. Add lightly beaten cream.
  11. Beat the egg whites stiffly.
  12. Add remaining sugar little at a time, beating well after each addition.
  13. Fold gently into the cheese mixture.
  14. Pour into the pie dish and leave to set in the refrigerator. ( Not freezer ).
  15. Decorate with grated chocolate and serve with chocolate sauce.

For Chocolate Sauce:

  1. Mix all the ingredients together except butter.
  2. Place on fire, cook stirring till it begins to boil.
  3. Lower the flame and simmer for 2-3 minutes.
  4. Remove from fire, add butter.
  5. Cool and chill in refrigerator.

Serves: 4 to 6

Ingredients:
100 g - marie biscuits
1� cup - cream cheese
� cup - powdered sugar
1/2 cup - fresh cream
1/3 cup - butter
2 - eggs, large, separated
1 tbsp - gelatin
2 tsp - grated lime rind
2 tbsp - lime juice

For Chocolate Sauce:
1 � cup - water
� cup - sugar
2 tbsp - corn flour
2 tbsp - butter
1 tbsp - cocoa
1 tsp - vanilla essence
