Healthy Basil Chicken with Vermicelli

Method
  1. Cook pasta according to instructions.
  2. Drain, and set aside.
  3. Heat oil in a large frying pan, over medium-high heat.
  4. Saute onions and garlic.
  5. Stir in the tomatoes, chicken, basil, salt and chillies.
  6. Reduce heat and cook covered.
  7. Simmer for about 5 minutes, stirring frequently.
  8. Toss sauce with pasta to coat and heat through.
  9. Serve with Parmesan cheese.
Ingredients:
125 g - vermicelli pasta
1/2 tbsp - olive oil
1 - small onion, chopped
1 clove - garlic, chopped
200 g - chopped tomatoes
2 - boneless chicken breasts fillets - cooked and cubed
1 small bunch - fresh basil, chopped
1/2 tsp - salt
1/2 - dried crushed red chillies (optional)
2 tbsp - freshly grated parmesan
