Baked eggs with chicken masala

Method
  1. Boil the chicken in a little salted water along with the cinnamon, cloves and peppercorns until tender.
  2. Separate the meat from the bones and chop.
  3. Heat the ghee and fry the onion till golden brown then add the tomatoes, turmeric and coriander powders, garam masala and ginger. Simmer for 5 mins.
  4. Add the chicken, green chillies, coriander leaves and salt.
  5. Cook till most of the liquid is absorbed.
  6. Place this mixture in a baking dish.
  7. Carefully break the eggs on top and cook in a moderate oven at 177 degree C for about 10 mins or until the eggs are set.
  8. Makes 4 servings.
Ingredients:
6 eggs
1 small chicken
1 stick cinnamon
4 peppercorns
1 large onion, sliced
1 tbsp - coriander leaves, chopped
1 tbsp - ghee
1 tsp - turmeric powder
1 tsp - coriander powder
1 tsp - garam masala
1/2 inch - piece ginger, chopped
2 green chillies, finely chopped
Salt to taste
