Tropical Banana Freeze

Method
  1. Mash the bananas with lime juice.
  2. Add orange juice, golden syrup or honey and salt and mix well.
  3. Beat the egg white till frothy.
  4. Add the sugar little at a time, beating well after each addition.
  5. Fold this into the banana mixture.
  6. Drain the cherries from the syrup.
  7. Remove the stones and chop finely.
  8. Mix with orange rind and add to the banana mixture.
  9. Pour the mixture in shallow containers and place in freezer.
  10. When it is half set, remove from freezer and whisk till light. Return to freezer.
  11. Transfer to refrigerator shelf, 15 minutes before serving.
  12. Scoop into goblets and serve decorated with lime slices and mint sprigs

Serves: 4 to 6

Ingredients:
3 - ripe bananas, large
1 tin (450 g) - cherries
250 ml - milk
1/3 cup - powdered sugar
100 ml - orange juice
2 tbsp - lime juice
6 tbsp - golden syrup or honey
a pinch - salt
1 - egg white
2 tbsp - grated orange rind
lime slices and mint springs to garnish
