Mutton and Vegetable Mix

Method
  1. Grind ginger, garlic and 2 medium onions to a paste.
  2. Heat both the oils together and fry the ground paste to a golden colour.
  3. Put in the mutton, salt and all the spices with the exception of garam masala and fry to a rich golden colour.
  4. Put in the coconut milk and cook over a slow fire till the mutton is almost done, then add all the vegetables till the vegetables and mutton are cooked.
  5. But continue simmering over a slow fire till the mixture turns dry and the oil floats to the top.
  6. Put in a serving dish and sprinkle garam masala, minced chillies and sprigs of coriander leaves on top.
Ingredients:
1 kg - mutton, cut into serving portions
3 cups - coconut milk
1 - fresh bamboo shoot, diced into thin rings
4 - medium capsicums, quartered
6 - baby onions, peeled
2 - medium onions
2" piece - ginger
6 flakes - garlic
1 tbsp - each of ground cumin seeds, garam masala and chilli powder
a few sprigs coriander leaves
2 - green chillies, minced
75 g - each of mustard and sweet oil
salt to taste
