Carrot and Pineapple Salad
Method
  1. Peel and cut carrots into match sticks.
  2. Drain the pineapple slices and chop and mix with carrots.
  3. Crush the ginger and squeeze the juice.
  4. Combine ginger juice3 with oil, orange juice, lime juice, Soya sauce, salt, pepper and sugar.
  5. Pour over the carrot pineapple mixture and toss well.
  6. Serve garnished with coriander leaves.

Serves: 3-4

Ingredients:
carrot - 250 gm
tinned pineapple - 2 to 3 slices
ginger - 3 cm
soya/sunflower oil - 1 tbsp
orange juice - ¼ cup
lime juice - 1 tbsp
dark soya sauce - 2 tsp
sugar - 1 tsp
coriander leaves - 2 tbsp
pepper to taste
salt to taste
