Method
  1. Wipe the ladies fingers clean.
  2. Remove stems and tips and slit lengthwise.
  3. Mix all powdered spices, sugar, coconut, coriander leaves and salt.
  4. Stuff the lady fingers with this mixture.
  5. Heat oil in a non-stick pan and arrange the stuffed bhindis in it. Do not cover.
  6. Cook on a low flame, turning occasionally without burning or breaking the vegetable.
  7. Serve with parathas.
Ingredients:
3/4 kg. lady fingers
3 tbsp. mango powder (amchur)
3 tbsp. cumin seed powder
1 tsp. chilli powder
1/2 tsp. turmeric powder
3 tbsp. fresh coconut, grated
1/2 cup coriander leaves, chopped
1 tsp. caramelized sugar
4 tbsp. oil
Salt to taste
