Method
  1. Line the baking sheet with parchment or waxed paper.
  2. Combine the water and sugar in a large non-stick, heavy-bottomed sauce pan over medium-high heat.
  3. Stir to dissolve the sugar, 4 to 5 minutes.
  4. Add the corn syrup, honey, and salt.
  5. Stir constantly and slowly with a wooden spoon until the mixture comes to a gentle boil for about 2 minutes.
  6. Continue stirring until they starts to thicken.
  7. Add the nuts and continue stirring. Remove the pan from the heat.
  8. Add the butter and baking soda and stir until the butter is completely melted, about 1 minute.
  9. Pour the mixture onto the baking sheet, being careful as it is very hot, and spread it evenly with a rubber spatula.
  10. Let cool completely. Break into pieces and store in an airtight container.
Ingredients:
1 cup - water
2 cups - sugar
1 cups - light corn syrup
1/2 tbsp - honey
1 tsp - salt
2 cups - assorted nuts peices (pecan, walnuts, sliced almonds and peanuts)
1/8 cup (1/4 stick) - unsalted butter, at room temperature
1/4 tsp - baking soda
