Method
- Cook noodles in a large pan of boiling water, until just tender and leave it to drain.
- Heat oil in a wok or pan.
- Add garlic, onions and red capsicum.
- Stir over medium heat for 3 minutes.
- Add cucumber and curry powder and stir over medium heat for another 3 minutes.
- Add veg stock, soya sauce, salt and sugar and stir until mixture boils.
- Add noodles and spring onions and stir over low heat 3 minutes or until ingredients are well combined and heated through.
