Mixed vegetable pulao

Method
  1. Prepare all vegetables and wash them. Drain rice.
  2. In a pressure cooker, heat jaggery and asafetida. When it melts, add oil.
  3. Add cloves and cardamoms and curry leaves.
  4. Add vegetables. Stir fry.
  5. Add rice and all other spices. Stir till shiny.
  6. Add 5 cups hot water and salt.
  7. Cook under pressure for 7 mins. or till done and fluffy.
Ingredients:
2 cups mixed vegetables (cauliflower, peas, potato, green gram etc.)
1 ½ cups basmati rice, soaked in water for 2 hours
1 tsp. garam masala powder
1 tsp. chilli powder
½ tsp. turmeric powder
6 cloves
6 cardamoms
1 tbsp. jaggery
¼ tsp. asafeotida
5 curry leaves
5 tbsp. oil
Salt to taste
