Pumpkin Nut Bread

Method
  1. Peel, deseed and cut the pumpkin into one inch pieces.
  2. Place these on an oven-proof tray and bake in a oven at 180 degree for 20- 25 minutes.
  3. Scrape out and mash the flesh.
  4. Combine together the flour, baking soda, baking power and cinnamon.
  5. Cream the sugar, butter and the curd to blend well.
  6. Use a food processor for this.
  7. The batter should be smooth and fluffy.
  8. Remove to a mixing bowl and add the pumpkin pulp and the water, stirring all the time so that no lumps form.
  9. Add the nuts and the orange rind.
  10. Grease a loaf pan.
  11. Pour the mixture into the pan and bake in an oven for about 45-50 minutes at 180 degree or until a tester inserted into the centre comes out clean.
  12. Allow to cool and before removing from the oven.
  13. Cut into slices and serve with a cup of hot tea.
Ingredients:
2 cups - pumpkin pulp
2 1/2 cups - flour
1 tsp - baking power
1/2 tsp - baking soda
1 tsp - cinnamon powder
1 cup - sugar
3/4 cup - butter
1 1/2 cup - thick sour curd
3-4 tsp - lukewarm water
3-4 tbsp - cashew nuts (broken)
1 tsp - orange rind, cut into very fine pieces
