Method
- Peel lemons thinly.
- Remove pith and discard.
- Slice fresh of lemons in a large china bowl.
- Sprinkle with citric acid & leave for 24 hrs.
- Dissolve sugar in the water, bring to the boil & then pour over the lemon liquid.
- Leave for 24 hours.
- Strain & bottle.

2 - lemon
30 g - citric acid
750 g - sugar
3 pints - water
