Thai Fried Rice

Method
  1. Heat oil in a pan.
  2. Fry the garlic in it until browned.
  3. Add tofu and onions and fry 2-3 minutes.
  4. Add the rice, mushrooms, potatoes, tomatoes, brown sugar and soy sauce and fry another 2-3 minutes.
  5. Add the curry powder, turmeric, and pepper. Mix well.
  6. Cut the green onions into pieces and sprinkle over the top, along with the snipped basil.

Ingredients:
4 cups - plain cooked rice
4 nos - garlic pods(chopped)
4 tbsp - veg oil
1 cup - tofu (sliced into strips)
1 no - onion(sliced)
1-2 nos - sweet potatoes or white potatoes(diced)
1/4 lb - mushrooms(sliced)
1-2 - tomatoes(chopped)
1 tsp Brown sugar
3 tbsp Light soy sauce
1/4 tsp Curry powder
1/2 tbsp Turmeric powder
1/4 tsp Pepper
2 - 3 nos - green onions (sliced)
2 - 3 sprigs - Thai basil(snipped)
