Mushroom and Corn Quiche

Method
For Pastry:
  1. Mix Maida with salt. Add butter/margarine and mix lightly with finger tips till the mixture is like bread crumbs.
  2. Add ice cold water little by little till the mixture holds together. (use minimum amount of water)
  3. Knead light ly, keep covered in refrigerator for 15 minutes.
  4. Roll out the dough to about 1/8 inch thickness and line a greased 8 inch pie plate with it.
  5. Prick it with a fork and bake in a hot oven (200C) for 15 minutes.
  6. Take out the pie and reduce the oven temperature to 170C
  7. Meanwhile, prepare the filling.

For Filing:

  1. Heat the oil, fry curry paste till fragrant.
  2. Add mushrooms. Sprinkle with salt. cook stirring for 2 minutes.
  3. Add corn kernels, light Soya sauce, mix well and remove from fire. Spread it in the pie dish.
  4. Beat the eggs lightly and season with salt and pepper.
  5. Add the coconut milk.
  6. Pour over the filling in the pie dish.
  7. Sprinkle coriander leaves and cheese on top.
  8. Return to the oven and bake for 15-20 minutes, till the filling is set. Serve hot or warm, sliced.

Serves: 4 to 6

Ingredients:
For Pastry:
2 cup - maida
1/2 cup - butter/margarine
1/2 tsp - salt
ice cold water to mix

For Filing:
150 ml - thick coconut milk
1 cup - mushrooms, chopped
50 g - cheddar cheese, grated
4 - eggs, lightly beaten
1/2 cup - cooked sweet corn kernels
2 tbsp - oil
2 tbsp - thai red curry paste or to taste
1/2 tsp - salt
1 tbsp - light soya sauce
salt and pepper
2 tbsp - coriander leaves, chopped
