Mexican Rice

Method
  1. Cook the mexcian rice (short grained) with little oil, few strings of saffron & turmeric powder.
  2. In a pan, put the cooking oil and the cut onions (preferably cut short).
  3. Once the onion is slightly fried, add the beans and corn & mix well.
  4. When all the water evaporates, add the cooked rice, seasoning, salt and mix well.
  5. Serve hot and garnish with coriander leaves.
Ingredients:
1 cup - mexican rice
few strings - saffron
1/4 tsp - turmeric powder
1/2 cup - black beans (from can)
1/2 cup - corn (frozen)
1 - onion
1 tsp - taco seasoning or any available seasoning or curry powder
1/2 tbsp - cooking oil
salt to taste
