Reducing the fat in our cooking is one of the challenges we face when cooking healthy meals. This task becomes more challenging when we work with starch and gluten rich ingredients. Many Indian dishes are based on such ingredients : rice, semolina ( rawa, sooji) ,vermicelli( semiya) etc. When fat is reduced in some of the popular dishes made with these ingredients, the result is a sticky unpalatable mass. To make these dishes acceptable, we have modify the way we cook them .In this article, I present three dishes made with vermicelli , which is used frequently in Indian cooking as it is easy and quick to prepare.Low Fat Semiya Dishes
Many Indian breakfast dishes are prepared from semolina ( rawa). The traditional method of preparation involves usage of generous amounts of fat. The fat content in these dishes can be reduced by using whole wheat rawa ( not broken wheat, which has larger grains) instead of regular semolina. Given below are the modified versions of three popular South Indian rawa dishes.
