Golden Corn Fritters

Method
  1. Combine first four ingredients in a large mixing bowl; mix well and set aside.
  2. Combine eggs, corn, milk, and 2 tablespoons vegetable oil; mix well. Stir corn mixture into dry ingredients.
  3. Drop mixture by rounded teaspoonfuls into oil heated to 375 degrees; cook fritters until golden, turning once.
  4. Makes 3 dozen.
Ingredients:
1 cup self-rising flour
1 tsp sugar
1 tsp salt
1/2 tsp pepper
2 eggs beaten
1 1/2 cup fresh corn, cut from cob (about three ears)
1/2 cup milk
2 tsp oil
Hot vegetable oil for frying
