Vegetable and Herb Omlette

Method
  1. Beat eggs. Add all ingredients and mix well.
  2. Heat oil in a frying pan. Pour mixture in the pan and cook on slow flame.
  3. When puffed, flip the omelette and cook the other side.
Ingredients:
2 - eggs
1 - capsicum/green bell pepper, chopped
1/2 - spring onion, chopped
2/3 - green chillies, chopped
Salt to taste
1/2 tsp - black pepper
1 tsp - soy sauce
1 tsp - chilli sauce
1/2 tsp - oregano
A pinch of thyme
1 tbsp - fresh coriander/ mint leaves, chopped
