To Prepare Garlic Butter:
9 cloves - garlic, roasted, peeled and pureed
175 g - salted butter, softened
pinch - black pepper

3 tbsp - butter
1 - medium onion, finely chopped
150 ml - mushrooms, finely sliced
1 1/2 tbsp - plain flour (maida)
2 cups - vegetable or chicken stock
2 1/4 tbsp - lemon juice
3 - egg yolks
2 tbsp - fresh chopped chives
