Lamb Satay Burgers

Method
  1. For the burgers, deseed and quarter the peppers.
  2. Grill until the skin blackens. Peel away skin and chop the peppers.
  3. Combine with remaining burger ingredients. Blend and shape into patties.
  4. Chill for 30 minutes.
  5. Shallow fry in hot oil until cooked through.
  6. For the Satay sauce, combine the ingredients in a pan.
  7. Bring to a simmer while whisking until thickened.
  8. Stir in coriander. Season and serve with the burgers.

Ingredients:
200 gm - red bell peppers
1/2 kg - minced meat
2 1/2 tbsp - peanut butter
2 tsp - chopped garlic
2 tbsp - soya sauce
100 gm - roasted cashew nuts
3 tbsp - chopped coriander
2 - green chillies, seeded and chopped
3 tbsp - fresh breadcrumbs
4 tbsp - sweet chilli sauce
3 tbsp - peanut butter
250 ml - chicken stock
60 ml - coconut cream
1 tbsp - lemon juice
2 tbsp - chopped coriander
oil for frying
