Egg Paneer Curry

  1. Break the eggs into a bowl and stir well.
  2. Pour the mixture into slightly oiled/heated sauce pan and spread evenly so as to form a layer of approx 1 cm.
  3. Turn this egg layer to other side after it turns to a yellow flat piece.
  4. Empty the pan and cut this layer into 1 sq inch pieces/slice (which may look like paneer) and keep aside.
  5. Blend/grind Fried channa/ground nuts, wet coconut, onion, tomoto, green chillies and salt into a loose paste.
  6. Fry this in the sauce pan with rest of the oil.
  7. Add a cup or two water and spice powder to this heated gravy and after 2-3 mins heating add egg pieces/slices.
  8. Turn-off the stove after 3-4 mins.
  9. Garnish it with fresh coriander leaves.
  10. Serve with Indian bread/chapati to awaiting eaters.
Fried channa/ground nuts - 50 gms
Wet coconut - 1/2
Onion - 2 (medium size)
Tomoto - 100 gms
Green chillies - 2
Salt - 1/2 tsp
Cooking oil - 50 ml
Eggs - 4
Garam masala/spice powder - 1 tsp
Coriader leaves - 4
