Chicken Chettinad

Method
  1. Heat oil in a kadhai (wok). Add whole garam masala.
  2. When it crackles, add the onions and saute till brown.
  3. Add the ginger-garlic paste, red chilli powder, coriander powder, turmeric powder and saute for 2 mins.
  4. Add the chicken and cook on high heat for 10 mins.
  5. Now add the tomatoes and cook on medium heat.
  6. After 5 mins, add 1 cup of water and salt to taste.
  7. Cook till chicken is tender and the gravy is thick.
  8. Finish with crushed peppercorns, lemon juice and curry leaves.
Ingredients:
Chicken, cut into small pieces - 1 kg

Whole garam masala:

Cinnamon - 2 inch piece
Green cardamoms - 4
Cloves - 6
Peppercorns - 10
Large onions, finely chopped - 2
Ginger-garlic paste - 2 tbsp
Red chilli powder - 2 tsp
Coriander powder - 1 tbsp
Turmeric powder - 1 tsp
Large tomatoes, finely chopped - 2
Lemon juice - 1 tsp
Crushed pepper corns - 1 tbsp
Spring curry leaves - 1
Oil - 1/2 cup
Salt to taste
