Chicken Supreme

Method
  1. Cut the broiler chickens into fours.
  2. Remove extra bones, the pieces should look like chops.
  3. Rub chicken pieces with lemon juice, salt and pepper. Leave for 6 hours.
  4. Fry chicken pieces in butter in a frying pan till cooked. Arrange on a shallow plate.
  5. Melt cream, cornflour and beaten egg yolks.
  6. Drain extra butter from frying pan.
  7. Pour cream mixture into frying pan.
  8. Cook gently, stirring with a wooden spoon until thick.
  9. Add salt, pepper and mustard to taste.
  10. Pour sauce over chicken pieces.
  11. Sprinkle a little grated cheese over the sauce and keep the chicken hot until serving time.
  12. Decorate with crisp fried julienne potatoes.
Ingredients:
2 - broiler chickens (weighing about 800 gms. each)
2 cups - cream
1/4 cup - butter
1 tbsp - lemon juice
salt and pepper
2 tsp - cornflour
2 - beaten egg yolks
salt, pepper and mustard to taste
2 tbsp - grated cheese
