Chicken with cashewnuts

Method
  1. Heat a wok or deep skillet and add oil.
  2. Heat the oil on a low flame.
  3. Add chicken pieces and fry slowly.
  4. As the chicken turns white, remove it from the wok and set aside.
  5. Drain the oil, except about 2 teaspoons.
  6. Turn on a high flame and add the sauce.
  7. When the sauce begins to boil, add the cornstarch paste slowly and stir.
  8. Then, add the chicken, cashewnuts and celery.
  9. Keep stirring until the gravy thickens.
  10. Add salt and, finally the sesame oil.
  11. For sauce: Combine all ingredients in a bowl.

Ingredients:
1/2 kg. chicken breast, diced into 3/4 inch pieces
3/4 cup cashewnuts
1 bowl diced celery
1 tsp. sesame oil
1 cup oil
1 tsp. cornstarch mixed with 2 tsp. cold water
Salt to taste

For the sauce:
1 tsp. light soya sauce
1 tsp. dark soya sauce
1/4 tsp salt
1/4 cup chicken broth
1/8 tsp. pepper
