Method
- Heat a wok or deep skillet and add oil.
- Heat the oil on a low flame.
- Add chicken pieces and fry slowly.
- As the chicken turns white, remove it from the wok and set aside.
- Drain the oil, except about 2 teaspoons.
- Turn on a high flame and add the sauce.
- When the sauce begins to boil, add the cornstarch paste slowly and stir.
- Then, add the chicken, cashewnuts and celery.
- Keep stirring until the gravy thickens.
- Add salt and, finally the sesame oil.
- For sauce: Combine all ingredients in a bowl.
