Method
- Cut the chicken into bite size pieces.
- Heat oil in a non-stick pan and saute the pieces until well browned.
- Combine the chicken, figs, mango nectar, chicken stock and mixed herbs in a large microwave-safe dish.
- Mix well and cook on Medium High for 12 mins, stirring once after 6 mins.
- Add salt and pepper to taste and set aside for 10 mins. before serving.
- Sprinkle parsley over it and serve warm.
