Cinnamon chicken salad

Method
  1. Combine all the salad ingredients except pineapple in a large bowl and set aside.
  2. Combine all the dressing ingredients in a small bowl.
  3. Pour the dressing over the salad.
  4. Cover and refrigerate for at least 1 hour.

    To serve:

  5. Line a try with plantain leaf or lettuce.
  6. Place the pineapple shell on it.
  7. Mix the chopped pineapple into salad. Toss well.
  8. Spoon the salad into the pineapple and serve.

Ingredients:

For the dressing:
1/2 cup low fat mayonnaise
1/2 cup low fat yoghurt
1 tsp. vanilla essence
1/4 tsp. grated ginger
1/4 tsp. powdered cinnamon

For the salad:
2 cups cubed, steamed chicken
2 cups seedless green grapes
1 cup chopped celery
2 cups fresh pineapple, cubed
(reserve the shell for serving)
1/2 cup finely chopped red capsicum
