Lemon Chicken Stir-fry with Walnuts

Method
  1. In a non-stick wok, cook the chicken until browned all over.
  2. Remove and keep warm in bowl.
  3. Add onions, capsicums and lemon grass, cook until vegetables are crisp tender.
  4. Add the walnuts, stir-fry for a minute or two.
  5. Add the chicken, rind, juice, sauce, stock cube and garlic.
  6. Stir fry until it has heated through.
Ingredients:
300 g - chicken breasts, skinless and boneless-sliced
1/2 - small chicken stock cube, crumbled
1 clove - garlic, crushed
1 - red capsicum
1 - yellow capsicum
3/4 th tbsp - chopped fresh lemon grass
1 - onion, sliced
2 tbsp - walnuts, halved
2 tbsp - lemon juice
1 tsp - grated lemon rind
2 tbsp - soya sauce
a sprig - rosemary
low fat salt to taste
