Orange Ginger Chicken

Method
  1. Grate the rind of the lemon and two of the oranges. Set the peel aside.
  2. Squeeze out the juice of the lemon and the two oranges. Set the juice aside.
  3. Section the third orange and set the segments aside. Heat the olive oil in a large skillet and add the chicken breasts, ginger and garlic.
  4. Saute till the chicken is browned on both sides. Reduce heat, and add the onion, red pepper strips and green peas.
  5. On low heat, combine the juice, soya sauces and cornstarch. Mix well and add to the skillet.
  6. Stir over medium heat till sauce thickens and coats the chicken and the vegetables.
  7. Add the orange segments. Serve at once on hot places with basmati rice.
Ingredients:
1 large lemon,
3 large oranges,
2 tbsp. olive oil,
2 chicken breasts boned,
skinned and pounded flat
1 piece ginger,
3 cloves garlic minced
1 large onion sliced
1 large red pepper,
julienned,
1 cup green peas,
3 tbsp. soya sauce,
1 tbsp. cornstarch mixed with 2 tbsp. water.
