Method
Mix chicken pieces with salt and pepper.
Drop the chicken in the cornstarch and mix well, coating completely.
Fry the chicken for 3 min until golden brown.
Drain on paper towels.
Heat water, add chopped beans and blanch. Drain and keep aside.
In a large saute pan, heat the oil, fry the cashews until golden.
Add the peppers and blanched beans.
Saute for 2 minutes.
Remove from the heat.
Toss the chicken and cashew mixture together and serve.
