Mango fig chicken

Method
  1. In a bowl, rub the garlic and ginger into the chicken and leave to marinate for 2-3 hours.
  2. Barbeque or pan-fry chicken until tender.
  3. Cut into 1&1/2 inch pieces.
  4. Heat ghee in a large non stick wok.
  5. Saute the onions, until light brown in colour.
  6. Add all the spices, sauté for a minute until it releases its aroma.
  7. Add the chicken, figs, mango puree, cream and lime juice.
  8. Stir and cook for 8-10 mins. until mixture thickens slightly.
  9. Serve hot with steamed or sauteed vegetables or rice.
Ingredients:
2 cloves garlic, crushed
3/4 tsp grated fresh ginger
1 kg chicken breasts, skinned and boneless and cubed
2&1/2 tsp ghee
2 medium onions, finely chopped
3/4 tsp coriander powder
3/4 tsp cumin powder
1/2 tsp turmeric powder
1/4 tsp ginger powder
10 dried figs, chopped
2 cups mango puree
1&1/2 cups cream
2&1/4 tbsp lemon juice
