Green mutton with lotus stem

Method
  1. Scrape gently the lotus stem and cut into one inch thick diagonal pieces. Heat half the quantity of the stem in a pressure cooker. Add the mutton pieces and salt to taste.
  2. Cook on medium heat till all the water from the mutton is dried.
  3. Now, mix in the ginger-garlic paste, spinach puree fried onion paste and cook on medium heat for at least 5-6 minutes, stirring from time to time.
  4. Lower the heat and mix in the coriander paste, mint paste and the tomato paste and also the spices. Keep stirring and cooking on low heat.
  5. Add oil from time to time and cook and stir for 4-5 mins. more.
  6. Now, mix in the lotus stem pieces. Stir gently. Add 3 cups of water and pressure cook till mutton is tender and so are the lotus stem pieces. Serve with rotis.
Ingredients:
1 kg mutton
200 gms lotus stem
3 tsp ginger-garlic paste
1 cup tomato paste
2 cups spinach puree
1/2 cup coriander paste
1 cup onion paste - browned
2 tbsp mint paste
1 tsp haldi - turmeric powder
1 tsp annar dana powder
3 tsp roasted jeera powder
1 tsp red chilli powder
5-6 tbsp oil
Salt to taste
