Mutkula (Rice Dumplings in Mutton and Greens Gravy)

Method
  1. Cut mutton into small cubes and mix with cuds.
  2. Heat oil in a pressure pan.
  3. Add onion and fry golden brown.
  4. Add ginger and garlic pastes and fry till fragrant.
  5. Add green chilies and all the leaves.
  6. Fry for � minute.
  7. Add tomato, chili and turmeric powder and the mutton with the curds.
  8. Add salt to taste and fry till almost dry.
  9. Add Chana dal and 1 cup of hot water.
  10. Pressure cook for 20 minutes.

For Rice Dumplings:

  1. Combine rice flour with coconut, cumin and salt.
  2. Add hot water, little at a time till the mixture forms smooth, soft, but not sticky dough.
  3. Divide the dough into lime size balls.

To Finish:

  1. Open the cooker and add about 4 cups of water to the meat gravy.
  2. Put it back on fire and heat till it begins to boil.
  3. Lower the heat to keep the gravy simmering.
  4. Add the rice balls, one by one to the gravy and cook till the dumplings are cooked.
  5. Serve immediately.
Ingredients:
mutton - 250 gm
curds - � cup
oil - 5 tbsp
onion - 1 � cup, thinly sliced
ginger paste - 2 tsp
garlic paste - 1 tsp
green chilies - 4 to 6, slit
coriander leaves - 4 tbsp
mint leaves - 2 tbsp
fenugreek or other greens - 1 cup, chopped
tomato - 1, chopped
chili powder - 1 tsp
turmeric powder - � tsp
chana (chick peas) dal - 3 tbsp
salt to taste

For Rice Dumplings:
rice flour - 1 � cup
grated coconut - � cup
cumin seeds - 2 tsp, crushed
hot water to mix
salt to taste
