Salted Fish Curry

Method
  1. Roast the ikan jambal until the fishy smell is gone.
  2. Rinse in water and slice in 4 x 4 cm squares.
  3. Fry the chilies and spice-paste until fragrant.
  4. Add the salam leaves and the lengkuas.
  5. Continue frying for a minute or more.
  6. Add the santan and fish.
  7. Bring a boil and continue simmering until santan thickens.
  8. Add the potato slices and the sugar.
  9. Continue cooking until tomato slices have gone limp.
  10. Remove and serve.
  11. Make 4-6 servings with other dishes.
Ingredients:
300 gram - jambal roti or other salted fish, cleaned
375 ml - thin coconut milk
vegetable oil
100 gms - red chilies, finely sliced diagonally
2 - bay leaves
2 cm - fresh galanggal(lengkuas)
1 - tomato, sliced
a pinch - sugar

Spices:
8 - shallots
2 - cloves garlic
� cm - fresh kencur
