Method
- Line an 8-inch square cake pan with parchment paper.
- Cut out two thick strips and place them cross-wise so that it is easy to remove the brownie later.
- Blend the cocoa and superfine sugar with the milk.
- Beat the egg whites lightly and then add it to the cocoa mixture.
- Mash the bananas well.
- Add the banana, brown sugar and vanilla extract.
- Sift the flour over the mixture.
- Fold in the oat bran.
- Pour it into the prepared pan.
- Bake for about 40 minutes in a preheated 350F oven, until firm.
- Cool in the pan for about 10 minutes and then cut it out into squares.
- Dust it with powdered sugar and enjoy.
- Makes about 9-12 pieces.
Note: 1) If you do not have oat bran, substitute with nuts like walnut for the chewiness.
2) Usually silken tofu as a substitute for eggs works esp. well in brownies than in any other baked products.
