Method
  1. Beat 2 eggs whites till stiff. Mix in brown sugar and half tsp. essence.
  2. Cream together butter and sugar.
  3. Mix in egg yolks and remaining white and beat nicely.
  4. Sift together flour, baking powder and salt thrice and mix in along with remaining essence and milk.
  5. Put in a well greased baking pan.
  6. Sprinkle nuts on top and put stiffly beaten egg white mixture on top.
  7. Spread nicely and level the surface, bake in a moderate oven for half an hour, or till a knife inserted in the centre comes out clean.
  8. Cut into neat squares while stiff warm.
  9. Cool nicely and store in airtight tin.
Ingredients:
1 cup - refined flour
1/2 cup - each of softened butter and sugar
1/4 cup - each of blanched and coarsely pounded almonds, walnuts and groundnuts
1 3/4 cup - light brown sugar
3 - eggs, separated
1 tsp - each of baking powder and essence of vanilla
a big pinch of salt
3 tbsps - milk
