Chocoate and Orange Mousse
Method
- Place the chocolate in a bowl with grated orange rind and juice.
- Place the bowl over a pan of simmering water.
- Stir until the chocolate has melted.
- Separate the egg yolks from the whites.
- Beat the egg yolks. Add the egg yolks to the melted chocolate.
- Beat the egg whites till stiff.
- Add it to the chocolate mixture. Mix well.
- Pour in small individual bowls and chill to set for at least 2 to 3 hours.
- Serve garnished with chopped cashewnuts.

500 g - plain chocolate
4 - small oranges (rind and juice)
12 - eggs
few chopped cashewnuts
