Chocoate and Orange Mousse

Method
  1. Place the chocolate in a bowl with grated orange rind and juice.
  2. Place the bowl over a pan of simmering water.
  3. Stir until the chocolate has melted.
  4. Separate the egg yolks from the whites.
  5. Beat the egg yolks. Add the egg yolks to the melted chocolate.
  6. Beat the egg whites till stiff.
  7. Add it to the chocolate mixture. Mix well.
  8. Pour in small individual bowls and chill to set for at least 2 to 3 hours.
  9. Serve garnished with chopped cashewnuts.
Ingredients:
500 g - plain chocolate
4 - small oranges (rind and juice)
12 - eggs
few chopped cashewnuts
