Method
  1. Combine sugar and shortening, beating until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition. Stir in vanilla.
  3. Combine flour, soda, and salt; add to creamed mixture, beating well.
  4. Stir in oats and coconut.
  5. Chill dough 1 hour.
  6. Shape dough into 1-inch balls.
  7. Place 2 inches apart on ungreased cookie sheets.
  8. Bake at 325 degrees F - 140 C for 12 to 15 minutes.
