Date Souffle with Orange Sauce

Method
  1. Puree dates in blender or food processor. Mix with flour and butter.
  2. Heat milk until nearly boiling and gradually stir into date mixture.
  3. Cook over hot water about 5 mins, stirring constantly. Add orange rind.
  4. Beat egg yolks until thick and beat in sugar gradually.
  5. Stir in hot mixture slowly. Cool.
  6. Fold in stiffly beaten egg whites; pour into greased soufflé dish, place in pan of hot water and bake at 160°C for 1 hour until set.
  7. Serve with orange sauce

To Make Orange Sauce:

  1. Mix sugar and cornflour in saucepan.
  2. Add orange juice and rind and cook over medium heat, stirring constantly.
  3. Cover and cook over boiling water 10 mins. longer.
  4. Just before serving, stir in cream.

Makes: 1 ½ Cups

Ingredients:
½ cup - fresh dates, stoned
6 tbsp - flour
¼ cup - softened butter
1 cup - milk powder
2 tbsp - finely grated orange rind
3 - eggs, separated
3 tbsp - sugar

For the Orange Sauce:
¼ cup - sugar
1 tbsp - cornflour
1 cup - orange juice
2 tbsp - finely grated orange rind
½ cup - cream
