Boiled egg chilli fry

Method
  1. Discard the egg shells, halve the eggs and then cut the boiled eggs into thin long slices.
  2. Take a pan, heat oil.
  3. Add onions, saute til it turns pink.
  4. Now add chopped tomato, turmeric, chilli powder, green chillies and saute for 2 mins.
  5. Add salt and mix.
  6. Now take off half of this masala mixture. Spread the other half evenly on the pan. Now gently place the egg slices on the masala on the pan.
  7. Cover the egg slices with the other half masala portion that had been kept aside earlier.
  8. Garnish with coriander leaves.
  9. Cover the pan with lid and simmer for 2 mins.
  10. Switch off gas.
  11. Leave it unopened for another 5 mins.
  12. Ready to eat with pav/ as a stuffing in a chappati/dosa.
Ingredients:
4-6 - boiled eggs
3 - onions, medium sized finely sliced
1 large - tomato (chopped into long pieces)
1/4 tsp - turmeric powder
1/4 - chilli powder
2 - green chillies, medium sized cut into 3 equal parts
2 tsp - coriander (optional)
Salt to tastev 2 tsp - oil
