MethodFor the pie dough:
- Sift the flour, salt, and baking powder into a mixing bowl.
- Make a well in the middle of the flour.
- Add the sugar, the butter and the egg to the well.
- Little by little, incorporate the flour to the butter, the sugar, and the egg.
- Once the dough becomes too dry, add the cream and form a ball.
- Knead the dough twice before using.
For the pie:
- Preheat the oven to 400 deg F.
- Roll half of the dough.
- Place the dough in a pie plate that is 1&1/2 inch high and preferably has a removable bottom.
- Prick the bottom of the pie shell with a fork and brush with beaten egg.
- Place the apples in a mixing bowl.
- Add the sugar and the corn starch.
- Mix the ingredients well.
- Fill the pie shell with the apple mixture.
- Cook in the oven at 400 deg F for 25 to 30 mins.
- Place the sour cream and the eggs in a mixing bowl.
- Beat well with a whisk.
- Remove the pie from the oven after 25-30 mins. of cooking time.
- Pour the sour cream mixture over the apples.
- Replace the pie in the oven and cook for an additional 20 mins. at 350 deg F.
