MethodPeel the potatoes, cut into pieces. Place in a saucepan cover
with salted water, bring to the boil and cook until tender. Drain
well then mash thoroughly. Separate eggs, add yolks to potato with
salt and pepper and mix well. Grate cheese, beat into potato
mixture. Leave to cool. Form potato mixture into balls about the
size of a large walnut, roll in flour.
Beat the egg whites lightly on a plate. Roll potato balls in egg
white and then in breadcrumbs.
Heat oil to 190 degree C. Place potato balls, a few at a time in
a frying basket. Fry in deep fat until golden brown. Drain on
kitchen paper. Serve hot.
