Egg and cheese in tomatoes

Method
Slice off tops of the tomatoes and scoop out the pulp.
Place tomato cases evenly on a greased baking dish.
Heat the oil and saute the onions and add the garlic.
Then add the chilli and cumin seed powders.
Fry for a few mins. Beat the eggs well.
Add the eggs to the onion mixture along with the tomato pulp, capsicum, grated cheese and salt.
When the mixture becomes creamy, fill the tomato cases with it and sprinkle with grated cheese.
Bake in a moderate oven at 190 C until the cheese has melted
Makes 4 servings.

3 eggs
1/2 cup minced onion
1/2 cup grated cheese
8 large firm tomatoes
1 tsp chilli powder
1/2 tsp cumin seed powder
Oil
1/2 cup minced capsicum
3 cloves garlic, minced
Salt to taste
Grated cheese for topping
