Eggs And Brinjal Bake

Method
  1. Wash and dry the brinjals.
  2. Cut into rounds of 1.25 cm (1/2 ") thickness.
  3. Prong well with a fork.
  4. Make a mixture of the chilli powder, turmeric powder and salt and smear on to both sides of each slice of brinjal.
  5. Keep aside for 1 hour. Heat the oil in a frying pan and fry the brinjal slices on both sides.
  6. Arrange these on a baking dish.
  7. Sprinkle each slice with some garam masala and coriander leaves. Beat the eggs and add salt to taste.
  8. Pour over the brinjals and bake in a moderate oven at 177°C until the eggs are set.
  9. Sprinkle with some more coriander leaves and serve immediately.
  10. Makes 2 servings.
Ingredients:
2 eggs
2 large round brinjals
2 tbsp. chopped coriander leaves
Salt to taste
Oil
1/2 tsp - turmeric powder
1/2 tsp. chilli powder
1/4 tsp. garam masala powder
