Method
  1. Place 4 scoops (about 1/2 cup each) of ice cream in a pan. Freeze for two hours.
  2. In a small mixing bowl mix egg and vanilla, and in a pie plate carefully stir together the cereal and cinnamon.
  3. Dip each frozen ice cream ball in the egg mixture and then roll them in the cereal mixture.
  4. Return coated ice cream balls to freezer and freeze for an hour or two. Reserve the remaining cereal mixture.
  5. In a small mixing bowl again stir the egg and vanilla.
  6. Remove coated ice cream ball from the freezer.
  7. Dip the frozen balls in egg mixture and then roll them in cereal mixture.
  8. Then freeze them for 2 more hour.
  9. Fill a deep pan with cooking oil, and fry the coated ice cream balls, one at a time, for 10-15 seconds or till golden brow.
  10. Do not fry all of them together, and be sure to remove quickly so the ice cream does not melt.
  11. Drain on paper towel return the fried ice cream balls to freezer while frying the remaining ball.
  12. Serve immediately, garnished with chopped nuts or chocolate sauce!
